Roasted Allotment Veg

This is not really a recipe - just more veg based inspo.... enjoy (I did!!).

Step one - chop up ALL THE VEGGIES, coat in some nice olive oil, salt and pepper. Pop in the oven to roast (I use 180c for most things, this was no different).

Courgette, Tomato, Carrot, Golden Beetroot and Chard Stems

Step Two - When the veggies have started to soften (maybe 30 mins mark) add some cheese (or don't, it's up to you). Cook further until it is all gooey and delicious.

Step three - Garnish and serve, I added nuts, I considered honey or hot sauce but I didn't add either.

Full plate of vegetables, nuts and cheese. Vibrant colours and plenty of flavour.
